Mango Salsa for the win!

I’ll tell you that I miss going to Qdoba and having their mango salsa on that salad during the summertime! I don’t know why they don’t make it anymore but man, I miss the taste of it! 

I ran across a similar recipe so I thought I’d try it out for myself and *chef’s kiss* it’s freaking amazing! (If I do say so myself…) It may just look like a pretty rainbow of color, but I promise you that you will be wanting to make bowls of this all summer long!

Now, let’s get into how to make it! I’d say it maybe took about 30 minutes to cut everything up and mix it. I put it in the fridge for a few minutes to sit and have all of the deliciousness come together before I ate it. Wow is it good! 

Here’s what you’ll need and how much: 

-2 cups of mango- I diced them up and I used two mangos 
-1 cucumber- peel it first and I took out most of the seeds and then dice it up 
-1 red bell pepper- dice that baby up too 
-1 red onion- dice it up 
-1 jalapeño- I took the seeds out cuz I’m a wimp with hotness but you can leave it in if you like the heat- and mince it up (that’s smaller than dicing)
-cilantro- I used about 1/4-1/2 cups 
-Lime juice- I used two limes but that was because they weren’t super juicy! You can always use one and then taste if you want more
- 1 tablespoon sugar- this just helps to sweeten it a bit and neutralizes some of the acids 
- a pinch of salt - don’t use a lot, just a little will do!

Mix this all together and this bad boy is done!

According to the measurement on the side of the bowl, it appears that it makes about four cups. 

I made a cheese quesadilla to go with this and my day was made! It’s the perfect salsa to go on your Mexican food or salads or chicken even. The list goes on and on…
